Cranberry Bliss Bars

Cranberry Bliss Bars

Yields 16 Bars

Ingredients for cake base:

2 sticks (1 cup) unsalted butter, softened

1 1/4 cup packed brown sugar

3 Large Eggs

1 teaspoon ground ginger 

1 teaspoon nutmeg (optional - i didn't use it :P ) 

1 teaspoon pure vanilla

1/2 teaspoon salt

1 1/2 cups sifted flour (i used plain all purpose ) 

1/4 cup white chocolate, coarsely chopped (i used Lindt white chocolate!)

1/4 cup candied ginger, finely chopped

Ingredients for frosting:

4 ounces cream cheese (so half a normal package you wont need the whole pack because you'll end up with too much frosting! trust me!!!)

1 1/2 confectioners (powdered) sugar (this is again to taste i probably only used about 1/2-3/4 of a cup and it was perfect)

2 Tablespoons unsalted butter, softened

1 teaspoon vanilla

1/2 teaspoon lemon zest (i skipped this one too gives it just a hint of lemon if you do add it though!)

And lastly GARNISH!!! 

1/3 cup white chocolate - you can use chips but if you buy a Lindt bar you'll have enough for the batter and garnish :) and for reference i always prefer using a bar of chocolate versus chips/morsels

1/2 cup dried cranberries (i use Crasins) 

Now to make everything!

* Preheat oven to 350°F and lightly grease a 9x13 pan (i always grease my pans with softened butter).


* Make the Cake; beat the butter and brown sugar until fluffy, add the vanilla and eggs, one at a time, waiting until egg is incorporated fully before adding the next

* In a separate bowl sift together flour, ginger, nutmeg (optional) and salt. Next add the flour mixture to the sugar mixture beating until fully incorporated. (I used a whisk for this part didn't switch to my KitchenAid till the frosting) Mixture will be VERY VERY thick. Fold in cranberries, chocolate and candied ginger. Spread the batter into the greased pan and bake for about 30 minutes or until light golden. Let the cake cool (i put mine into the garage for about 30 minutes so it could chill while it was cooling i made the frosting!


* Make the frosting
Using the paddle attachment on an electric mixer, beat the butter and cream cheese together until fluffy; add the lemon zest, vanilla, and salt; add the confectioners sugar bit by bit until the frosting has reached your desired consistency (the stiffer your frosting the more it will be like the starbuck's version). Spread the frosting evenly over the cake. and scatter the cranberries on top of the frosting. 

 *now this step is completely optional i don't use it because the bar is sweet enough but again if your trying to clone the starbucks counterpart don't skip this step!

In a double boiler , melt the white chocolate; once it is smooth, use a spoon and drizzle across the top of the frosted and cranberry topped bars

all thats left now is to cut it! :D

slice the whole cake/bar in half lengthwise, and then slice into four equal part horizontally. Slice each rectangle in had diagonally 

and folks that gives you 16 triangle-shaped bars!

last ps! best place to get the ginger is Fred Meyer of all places! At the spice rack and candied ginger are surprisingly cheap!

Headboard Process!

This is the cut out design of the head board i was going with its just plain plywood
i laid the foam piece down then laid the board on top and traced it so i could cut a nice line!
this is how it looked with the foam cut underneath!
my foam had a weird warp it it because it was tied up for like a year! haha! i found the foam in the attic
this is the spray glue i used to apply the foam to the plywood board!

~ hakuna matata

i will start this blog and it will be written in order of least importance to most important....begin

my duvet: soo i got a new it...and then the other night i was trying to write my sche on a dry erase mini calendar board...and oh hello this fancy schmancy visable ink marker apparently likes my duvet so it deposits 1 quarter size ink blob onto my duvet along with a nickle and dime sized one too...:( i was suppperrrrr mad until i remembered...A DUVET HAS TWO SIDES YAYYY!!!!

oh me...the eternal optimist (:

work;..i literally sleep at z gallerie....i get off work..i get home i go to bed...i wake up i go to work...i drink a frappachino i get a brain freeze i go back to work...exciting i know...

oh and our AC is out...the week mother nature decides to go on menopause



is not apart of my morning no longer...starting tomorrow morning i am ditching coffee for one week...i would like to eventually wean myself off not ditching caffeine but specifically coffee (:

CALI! is next weekend somewhat excited! :D oh and also! I BOUGHT NEW SOCKS :D!

Dear friends;..i miss you all dearly. Please send me either a text or a message or shoot send me a letter! :D and i would love to have tea with you! (: especially my newly graduated scholars! (: shoot me a message and ill see if i can squeeze you into my currently tight sche!

Dear World, Friends of FaceBook, and Kailei...this is what i have been up to :)

im soooo sorry! :)

i didnt realize its almost been like 6 weeks! but i have not been just sleeping around and working out...

i have been planning the rest of my life!
and as of now! it will be awesome!

here are some updates!

i will only listen to news not make it good or bad!

i will be happy because hey! im alive! ;) and so are you!

i love my job because i have one even if i only work once a week!

i dont care if you think I'm weird because guess what? i stand out and thats what makes me, me!

i love all of my family and they love me :)

I'm slowly weaning myself off coffee!

i am still planning on studying nursing to become an certified oncologist which if you don't know is a cancer nurse :)

i am still writing music and signing my heart out!

i still walk the walk as i talk the talk...

OH ! and i started this Workout regimen called ZUMBA! :D its pretty much hardcore dancing which make the 40 min or so go by oh so fast!

I still randomly see Tahomies and...most of the time its good to see them!.....
most of the time.....
hahaha :)


i am a pro french madeline baker ;) there freaking delicioso!

i want to go to seattle when my mum decides to purchase a digital camera for me!

for now im living, praying, singing, writing, sleeping, eating, and most important of all! LOVING :D
